This wine is an ideal example of Chavost’s new way. It’s produced from one hundred pc Pinot Meunier grapes, and is tart and vibrant with a slight hint of strawberry fruit. The bubbles are assertive, although not too much to handle, exhibiting off a softened tartness.How these grapes are used (or not employed) offers us a clue towards the type.
